In the Kitchen: Budget-friendly Cottage Pie (Shepherd’s Pie)

April 16, 2020 1 Comment

In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!

This quarantine made me more adventurous in the kitchen. We’re getting tired of rice and pasta dishes so I thought of making mashed potatoes to replace rice. I examined my freezer and saw the 1/4 kilo of ground beef that’s supposed to be for my burger patties. I suddenly remembered the Shepherd’s Pie I had in Bag of Beans Tagaytay, checked if I have all the available ingredients and voila! Cottage Pie for dinner!

How to make Dalgona Coffee

March 26, 2020 1 Comment

Dalgona coffee is all over Facebook and Instagram these days. Maybe because of this Covid-19 community quarantine thing and Starbucks coffee shops are closed that’s why people satisfied their coffee cravings by making this at home.

Dalgona coffee, cloud coffee, whipped coffee, first became popular in Tiktok. It’s inspired by a South Korean street food dalgona, a sponge candy called poppgi.

I’m sharing one really life-changing tip to make your life in the morning less chaotic. For breakfast, serve overnight oats! Why not, it’s delicious, easy to prepare, and healthy too.

When I don’t feel like waking up extra early in the morning to prepare Gwen’s breakfast, she just eats this. She likes her overnight oats plain with no toppings, sometimes we put peanut butter and banana for some flavor.

In the Kitchen: Salmon with Lemon Butter Sauce Recipe

I am all for easy recipes that need few ingredients and take less time to cook. Kita naman sa mga recipes ko di ba, lahat madali lang because I don’t have chef-level skills, I just want to serve delicious and healthy meals for my family.

Cooking with fish as the main ingredient is one of my #momhacks. First, ang bilis lang maluto ng fish, 30 minutes lang may ulam ka na. Second, it’s healthy! A favorite in our household is salmon, cooked either pan-fried or with soup.

Kaya naman I’m so happy that SeaKing PH sent me their Wild Alaskan Keta Salmon products, they have salmon chunks, slab, belly and steaks. The belly part is good for sinigang na salmon sa miso, and the steak is perfect for my Salmon in Lemon Butter Sauce.

Between me and my husband, Jeff, he likes veggies more than I do. Whenever there’s a salad section in a buffet, he would help himself for a serving or two. Last week, he wants Greek salad so I made a mental note to buy the ingredients in the grocery. I also like Greek salad because there’s feta cheese!!!
