In The Kitchen: Keto Omelette with Spinach, Mushroom, & Cheese

In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!

I tried the keto diet before but carbs is life for me haha. I think I only lasted 2 or 3 days without rice so I just switched into a low-carb diet, basta may rice! Now that I’m home, I want to try intermittent fasting (IF) since there will be less temptation because I won’t see other food except for what’s inside the fridge.

Anyway, here’s one easy keto omelette recipe I cooked before using spinach, mushroom, and feta cheese. On a keto diet or not, I still cook this because it’s yummy and healthy, and I love feta cheese!

It’s back to school and I’m waking up at 5 am in the morning to prepare Gwen’s baon. When the school service picks up Gwen, then it’s time for me to do some chores, nakakapagod din pala sa bahay! This is how a yayaless household with a kid going to school feels like. On my 3rd day, wala na… I’m so sleepy the whole day eh I already had my cup of coffee in the morning. I thought of making coffee jelly, so that I will still have energy to help Gwen in her assignments once she gets home. Pwede rin nyang snack, para magising ng konti after a whole day at school :p.

In the Kitchen: Easy Embutido Recipe

I got this easy embutido recipe from my Nanay. We would make batches of these and I was the one who will mix the ingredients and assemble them in the foil. It’s fun but Nanay is the one who will cut/dice the ingredients, I’m the mixer. Now that it’s back to school for some students, let me share this embutido recipe because moms can make this ahead of time, store in the ref, and just reheat it in the morning for baon. I make embutido during weekends, and then Gwen’s yaya will just pan fry slices for her baon. Jeff naman likes embutido straight out of the ref, just slice and dip in ketchup.

Grocery find: Purefoods Heat & Eat

I was in the supermarket thinking what to serve during Noche Buena. It was my second time to think of the menu for my family without Nanay since we moved out. Nakakastress pala! Stress na nga sa pila sa grocery, stress pa kakaisip ng lulutuin. Good thing I went to the frozen section and found the Purefoods Heat and Eat line. When I saw those two words: HEAT and EAT, I was sold!

In the Kitchen: Magnolia Chicken Sopas Recipe

It was a rainy week and Gwen’s classes were suspended since Wednesday. Since we’re all at home on a rainy Friday night, I decided to cook some comfort food for the family. There’s nothing more comforting than warm hugs and cuddles from your loved ones especially during this weather. It’s a great prelude to the weekend, watching our favorite TV series while enjoying our bowl of Chicken Sopas.

Macaroni Soup is one recipe I can make using what’s available in the fridge. Ground meat, corned beef, ham…. this is what I like about sopas, it’s very versatile. Last week, Magnolia sent me 5 of their #PambansangManok, Magnolia Whole Chicken. So this is what went to my Chicken Sopas.

Healthy Baon Idea: US Potatoes Hash Brown with Avocado & Egg

Back-to-school season happened early to us this year, Gwen’s school started classes last June 7. I now have a 1st grader! She’s excited with everything… her school service, her new school, her big stroller bag, and her new school schedule. Back in her Preparatory days, she’s at school for only 3 hours and she only brought snacks as her baon, mostly biscuits or sandwiches. But now that she’s in Grade 1, she’s at school until 2 pm. During the first week, her baon were biscuits or sandwiches for recess, and a rice meal for lunch. I was surprised to see her snack/lunch box wiped out, and looks like she wanted more because she’ll go straight to the fridge once she gets home. Her yaya said that maybe Gwen’s baon is not enough, and I have to include a more filling baon for her. And when it comes to a filling baon, potatoes always come to mind. I keep a stash of US Potatoes Hash Browns in the freezer because we love them for breakfast. Jeff and I also grab one of these to keep us satiated while on a 2-hour commute to work. Gwen loves the hash browns extra crispy!
