In the Kitchen: Shakshuka Recipe

In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. So newbies in the kitchen, I hope you’ll try my recipes or suggestions and let’s share kitchen secrets!

We just came back from a 5-day vacay in Palawan and coming out of a trip, we’re still in #sepanx mode. We stayed in Nacpan beach, a less touristy place an hour away from El Nido town proper. It only has 3 or 4 restaurant choices, very limited but there’s one that stood out because it serves something different other than Filipino food. The owner is Australian that’s why the menu has Fish & Chips, continental breakfast, they even have Civet coffee for Php 300 a cup, and Shaksuka!

If you follow my recipes, you’ll know by now that I just make simple meals for my family using easy to find ingredients, basically one that can be found in your pantry too. I do whip up special dishes if there’s a celebration or occasion. Since Christmas and New Year is just a few winks away, it’s time to prepare something new, but still delicious.

Just in time for the holidays, this basket filled with Contadina pasta, tomato-sauces, and olive oil  arrived.

Ginisang monggo is one of Jeff’s favorite ulam. However, I don’t know how to cook it so he just satisfies his monggo cravings during lunch at the canteen near the office. But a rainy day and spending it inside the house got me watching how to cook ginisang monggo on YouTube :p.

It’s been a while since I shared a recipe, well, I haven’t been adventurous in the kitchen until last weekend. My family got tired of eating meat and we wanted something light for a change. So last Sunday night, I cooked something for Jeff that will be a perfect pair for his craft beer.

Easy Bento Snack Ideas Vol. 1

If you’re following me on IG or FB, then you’ll know my #PrepSerye posts since Gwen started school. Yes, she’s back to school and I now have a pre-schooler. Unlike the previous years when there are dramas like crying and mommy-don’t-leave-me-here, everything went smooth and stress-free, YES! Well, except for the waking-up part because her class starts at 8 AM, and that’s too early because WE are not morning persons, so all of us are adjusting.

Anyway, for her first day of classes, June 20, I decided to make her baon to make her first day special. I didn’t intend to make her a bento on a daily basis but when I learned that she’s so happy whenever she opens her lunchbox at school, tinuloy-tuloy ko na. When I attended the first Parent-Teacher conference, one of the teachers said, “Mommy, ang cute-cute po ng baon lagi ni Gwen, kayo po gumagawa nun?” Aba, syempre, abot-tenga naman ngiti ko di ba.

I’m a newbie at this bento thing, plus I have no artistic and creative bone. But with the help of Pinterest, I’m slowly learning. So let me share to you what I made for Gwen during the first week. Just 4 snacks kasi madalas silang walang pasok or may activity every Friday.

In the Kitchen: Easy Mac and Cheese with Jolly Cream of Mushrooms

Whenever there are choices for side dishes in a restaurant, we never fail to order mac and cheese. It’s a favorite and yet I haven’t cooked one in our kitchen. I thought it’s complicated and that it required continuous stirring and later on baking. But lo and behold, I learned that I can whip up an easy mac and cheese recipe without baking. Well, baking is optional if you want that cheesy crust. I got another secret… I’m using Jolly Cream of Mushrooms in my Mac and Cheese, it’s one hack that made my pasta dish more creamy.
