In the Kitchen: My Mom-Friday’s No-Bake Blueberry Cheesecake

I’ve been planning to make a no-bake blueberry cheesecake but I always got intimidated because of too many instructions and ingredients (see, I’m that lazy). Anyway, I printed My Mom Friday’s No-Bake Blueberry Cheesecake recipe some weeks ago and bought some of the ingredients especially the Knox gelatine and can of Comstock blueberry pie filling.

One rainy weekend, I got excited to use the Boroseal glass containers from the Lock & Lock event and so I finally mustered my limited “baking” skills to make a blueberry cheescake.

In the Kitchen will be the category where I will post some of the recipes I cook for my family. I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. My weekends are sacred, it’s the time when I spend quality time with my little family, do a little housekeeping, a bit of shopping with Nanay, pampering, or cooking Jeff’s request.

This weekend, I baked brownies. It’s about time to abuse the oven I bought 3 years ago. Now, I’m not a baker okay, baking still intimidates me but thanks to Maya Kitchen for ready-made brownie mix. Just one box of mix, one egg, butter and voila…

Beef salpicao or beef tapa?

It’s a long weekend and it’s a relaxed Sunday afternoon at our home. Instead of popping pimples, I decided to spend my afternoon whipping up a new recipe. I watched Sharon at Home at the Lifestyle Network and they cooked Beef Salpicao. So I decided to try this one since there’s a few slices of sirloin in the freezer. I marinated the thin slices of beef in oyster sauce, soy sauce, garlic, pepper and Magic Sarap (my BFF in the kitchen).
