It’s been a while since my last recipe post, it’s because I don’t have something new to cook. I haven’t been adventurous in my cooking lately, or I didn’t find something that’ll excite me to cook something new again. Last weekend, I put a different spin in my macaroni soup, instead of using ground beef, I used Swift Premium Corned Beef. And because I miss eating ramen, I added corn kernels too which is an ingredient I like with my ramen.

We just stayed home this weekend, we thought it’s a payday Friday and some malls are having their sale so traffic will be hellish. Gwen’s new yaya is on a day-off, and honestly, we’re not sure if she’s a keeper. Gwen is not warming up to her new Ate even if it’s already a month, and I also don’t feel free moving around the house when she’s in it.

That’s why this weekend, I was in the mood to freely move in the kitchen, yay! Didn’t you notice that food is always associated with whatever the mood we’re in? In my case, I want to celebrate my momentary freedom with my family, hence I cooked Brown Sugar Pork Belly inspired by the Mood Food cookbook, a collaboration of Russell Hobbs and Chef JP Anglo.

Here’s another simple merienda we had earlier, using my favorite ingredient, tuna! hahaha, I can’t imagine our pantry without cans of tuna. I had another discovery in the grocery last week, Jolly Real Mayonnaise. Since I already use some Jolly products at home and they’re all good, I decided to give this a try.

What do you do when you have tuna and mayonnaise at home? Make tuna mayo spread. To amp it up, I brought out my panini maker and used tortillas instead of bread.

In the Kitchen | Tuna Asparagus Pasta

Just last week, I received a package containing Nestle All Purpose Cream thru Nuffnang Philippines with some ingredients for a pasta dish. It looks like the package arrived a bit late because it’s supposed to be something for the Christmas festivities. But with a print-out of a pasta recipe***, an EVOO, a box of penne pasta, and Nestle All Purpose Cream, I figured I can whip up a feast anytime! Hence, our #OUFT, or “Our Ulam for Tonight”! Not exactly an “ulam” but I just want to use the hashtag :p.

In the Kitchen | Tuna Carbonara Pasta

I promise you these are super-duper easy recipes because I’m really not an expert in the kitchen plus the fact that I don’t want recipes with so many steps/how-tos. Just 4-6 instructions, anything more than that, I skip the page of my recipe book and look for simpler recipes. This is another simple pasta recipe. I prefer cooking carbonara over tomato-based pasta because I find it easier since I just open all the ingredients, dump them in one pot, just add a bit salt if needed, and voila! Unlike in tomato-based pasta where I need to adjust on salt, sugar and pepper. My Tuna Carbonara recipe is special because I use Cream of Mushroom to make the sauce creamier and tastier. No need to use expensive Cream of Mushroom, I use Jolly Cream of Mushroom and also a small can of Jolly Mushrooms, cheaper alternative but yields delicious carbonara sauce too.

Look what this long weekend made me, finally tried baking Chocolate Chip cookies from scratch! It’s a first, before, I use those boxed mixes available for brownies. Now, I finally tested an easy and yummy Chocolate Chip Cookies recipe I can call my own.
